Nutrition & Dietetic Career Paths

To highlight the variety of paths at Aramark, we spoke with six dietitians to learn about their personal and professional success stories.

Claudia B., MS, RDN-AP, LDN, CNSC - Clinical Dietitian Specialist

Claudia received her bachelor’s degree in food, nutrition, and dietetics and then went on to complete her master’s degree in nutrition and dietetics, with an emphasis in nutrition education. She has also completed research in different areas, from the effects of plastic containers to emotions around snacks.

 

She recently completed the Dietitians in Nutrition Support DPG’s Advanced Practice Residency Program during which she focused her research project on the association of skeletal muscle mass and malnutrition. During the program, Claudia also gained experience in the use of imaging technology for nutrition assessment. She is a member of various nutrition groups as well, including the Academy of the Nutrition and Dietetics and ASPEN. Currently, Claudia covers the intensive care unit at a hospital in Evanston, Illinois.

Robert G., MS, RDN, LRD - Clinical Dietitian

Robert is a Registered Dietitian Nutritionist licensed in South Carolina, Georgia, and North Carolina. He currently serves as the Clinical Nutrition Manager at a regional medical center in Aiken, South Carolina, which serves the acute care and mental health needs for most of the county.

 

While he currently works as a Dietitian, Robert has worked in food service since childhood, with experience in many fields of hospitality, from fast food to fine dining. He learned managerial skills and steadily increased his culinary skills for the last two decades, persistently taking on challenging roles like Head Chef and Hospitality Director.

Monica K., MS, MEd, RDN, LDN - Regional Director, Clinical Nutrition Development & Deployment

Monica Klemm is a Registered Dietitian by trade with over 15 years of leadership experience in clinical management, employee engagement, and customer relationship management. She is a skilled mentor of dietitians and passionate about promoting health, nutrition education, clinical research, and clinical nutrition. Monica has served in a nutrition and dietetic capacity in a variety of settings, from large hospital systems to private practice offices.

Fiona B. L., DrPH, RDN, LDN - District Dietitian

Dr. Fiona is a District Dietitian within Aramark’s Collegiate Hospitality line of business. She holds a Doctorate in Public Health, Master of Science in Nutrition and Wellness, Bachelor of Science in Fire Investigation. Additionally, she holds certificates of training from the Commission on Dietetic Registration in childhood, adolescent, and adult weight management. At Aramark, Fiona oversees 11 higher education accounts in the state of Georgia. In her current role, she supervises health and wellness programming, signage and labeling compliance, student dining accommodations, and allergen training for associates.

 

Dr. Fiona is also a professionally trained plant-based chef and entrepreneur. In 2018, she founded her own whole food, plant-based culinary nutrition and wellness start-up and subsidiaries. Through her companies, she conducts plant-forward nutrition workshops, seminars, and cooking classes.

Donna M., MS, RDN, LD - Regional Dietetic Internship Director

Donna was born on the island of Nassau, Bahamas. Her humble beginnings included pathfinder activities such as camping, swimming and hiking. Donna attended high school in the Bahamas and attended colleges in Jamaica, Michigan, and Texas. She has worked in food and nutrition at several hospitals and universities in Houston and Atlanta, including large regional facilities and prominent, higher education institutions.

 

After an extensive career as a clinical dietitian, clinical nutrition manager, adjunct nutrition professor and food service director, Donna joined Aramark’s Dietetic Internship Program as the Regional Director. Her professional goal is to mentor dietetic interns in making a difference in the ever-changing world of nutrition trends, food service management, and clinical practice while preparing them to become future dietitians.

Lauren V., MBA, RDN - Nutrition Analyst

Lauren has worked in the field of food and nutrition for over 15 years. She is passionate about food sustainability, gardening, and providing fresh foods to underserved communities. Lauren enjoys educating others on the importance of food and its nutritional components.

 

Lauren serves as the Chair of Nourish, Aramark’s Employee Resource Group which provides a forum for nutrition professionals from Aramark’s different business units, geographies, experience levels, and job functions to connect and collaborate. She has also been published by the American Society of Metabolic Surgery and is a member of the Academy of Nutrition and Dietetics.
