The Sous Chef Coldside - Aventura Catering, is responsible for overseeing the cold kitchen operations at the fast-paced, high-volume Phoenix Convention Center.

• Lead, train, and manage the cold kitchen team, prep cooks, and other culinary staff.
• Assign tasks, supervise production, and ensure that quality and consistency are maintained.
• Work closely with the Executive Chef and other sous-chefs to coordinate food production schedules based on event needs.
• Execute and oversee the production of cold dishes, including salads, canapés, charcuterie boards, cold appetizers, and other specialty items as per the event’s requirements.
• Ensure proper portioning, plating, and presentation of cold food items.
• Maintain recipe standards and adjust for large-batch production.
• Monitor ingredient levels and coordinate with the purchasing department to ensure timely ordering of supplies.
• Conduct regular inventory checks of cold production items, ensuring freshness and minimizing waste.
• Ensure proper storage, labeling, and rotation of food items in compliance with food safety standards.
• Ensure all cold kitchen areas adhere to Aramark and local health department standards.
• Oversee HACCP processes and ensure proper handling, storage, and sanitation of all food products.
• Regularly inspect products and raw materials to maintain quality control and food safety.
• Work closely with the catering team and event coordinators to ensure all cold food items are prepared, plated, and delivered according to event timelines.
• Adjust production schedules as needed for multiple overlapping events.
• Provide on-site support for events when necessary, troubleshooting and ensuring smooth service delivery.
• Monitor food costs and labor efficiency, minimizing waste and optimizing production processes.
• Implement and maintain prep sheets, production schedules, and portion control systems to ensure consistent and cost-effective food production.
o Minimum of 7 years as a sous-chef, preferably in cold production, catering, or banquet settings. Experience in high-volume kitchens is required.
o Expertise in cold food production, including charcuterie, salads, and cold hors d’oeuvres.
o Strong leadership and team management abilities.
o Ability to work under pressure in a fast-paced environment and manage multiple events simultaneously.
o Excellent organizational skills, with the ability to plan production efficiently.
o Strong knowledge of food safety standards and best practices.
o Fast-paced, high-volume production environment with the need for quick thinking and flexibility.
o The role may require long hours; working an event based schedule to including evenings, weekends, and holidays.
o Must be able to stand for long periods and lift up to 50 lbs
Education: Formal culinary training or equivalent work experience in high-volume kitchen.
Certifications: Food safety certification (e.g., ServSafe) is required.
